Bikini

Serves 10 servings

Ingredients for the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Cocktail (makes 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Instructions

To prepare the Syrup: Put all the ingredients inside a pot, heat until it reaches a gentle boil, agitating so the sugar melts. Then, take off the stove allowing it to reach room temperature completely. Pour into a sterilised bottle, cap it and store in the fridge, where it will keep for about one month.

For the Cocktail Base: Mix all the spirits and syrup in a big jug, let it rest for 60 minutes, then pass it through best through cheesecloth, making it fully clarified.

When ready to serve: Pour 85ml of the premix into your stirring glass containing ice, and agitate carefully for a minute until cold. Filter to a frosted cocktail glass or equivalent, garnish with the cranberries and complete it with a quick spritz of mandarin oil over the top.
